What the heck do I do with kale? – UHC TV
Well, you may have heard of kale because it’s very popular and a lot of people are using it now. It’s very nutritious, and it looks like this. It’s a very dark, green, leafy vegetable – very high in vitamins and fiber and calcium. It’s really wonderful to incorporate into your cooking. But what do I do it?
All right, I’ve got a few ideas. First of all, the way you want to prepare it (holds up leaf) – this is called dinosaur kale, it’s really large. Also you can find it in smaller bunches, and there’s also red kale. There are lots of different versions. What I am going to show you you can do with any kind of kale.
The first thing you want to do is to cut the rib out, and it looks like this. You just lay it on a cutting board, take a knife, and kind of zip out the rib. So essentially, what you end up with is just the green leafy part.
You can throw it in stews, you can throw it in soups, you can sauté it. Just take a little olive oil, sauté it, maybe with a little garlic – kind of like you would do with spinach. So, it’s a wonderful vegetable in that way.
But, my favorite way to do it is kale chips. Very popular all of a sudden. I had some at a party recently and people went crazy. I’ve been making it ever since.
All you do is:
1) Wash and thoroughly dry your kale.
2) Rip it up into pieces just like this one and put it in a bowl.
3) Toss it with a very little bit of olive oil. You do not need much. For a whole bunch of kale, maybe a tablespoon. The less the better. You’d be surprised how little you can use to make these good. Toss and toss and toss until the leaves are completely coated.
4) Lay it out on a cookie sheet. Sprinkle it with salt. The time to sprinkle it with salt is before you bake so it kind of sticks. You can use whatever kind of salt you like. I tend to use either sea salt or kosher salt for something like this.
5) Put them in the oven at about 350° and let them bake. Look at them in about 10 minutes. (And again, you want to put them in a single layer. I should have mentioned). Feel one of them to see if they’re crispy. If they’re not, stir them a little bit, gently, put them back in, and you might have to go up as much as 20 minutes. You certainly don’t want to burn them. But they get very crispy, kind of like potato chips. You can see they are crispy and crunchy.
Really, you’re going to want to make tons of these. They’re crispy and delicious and they’re super, super healthy. So enjoy some kale.
