Easy Grilled Chicken Breasts – UHC TV
So, what’s a quick meal I can do with chicken breasts? That’s a really good question. We all keep those on hand – you can keep them in the freezer, they’re easy to keep around, they’re very versatile. But I’ve got a terrific idea that’s really easy, I make it all the time, and you’re going to love this one.
It’s Dijon Chicken Breasts on the Grill. And the way you do this is:
1) Mix up some Dijon mustard, and for this I use about 3 to 4 heaping tablespoons of Dijon
2) Mix that up with some olive oil, and we’re talking maybe a tablespoon or a tablespoon and a half, and about the same amount of vinegar. You can use any kind of vinegar you have – red wine vinegar, balsamic would work on this. You can certainly use orange juice or lemon juice if you don’t have vinegar.
3) Add a little salt and pepper, maybe a teaspoon or half teaspoon of each, depending on how much salt and pepper you like
4) And, you can add some herbs, too – if you have rosemary or thyme in particular, those would be great. You can use them fresh or dried. Remember, if you’re using dried, use about half the amount you would use if they were fresh, because they are much stronger.
5) Take about 4 boneless, skinless chicken breast halves, put them in a bag with a zip top, add the marinade, close the bag, smoosh it around, put it on a plate, and put it in your refrigerator.
You can do this the day before, you can do this the morning of, you can do this a half hour before you’re going to cook them. It really doesn’t matter. The longer they marinate the better, but whatever time you have is just fine.
So, pull them out of the bag, put them on a hot grill, and let them go. Usually, you want to avoid flipping things too much when you grill. So, put them on, let them cook halfway through, flip them over, and let them cook again until they are completely done inside – nice and hot but still juicy. Pull them off and let them rest for a few minutes as you would almost anything you grill. And then slice them up and there’s dinner. It’s fabulous.
