Ask the Expert: Maggie Gilbert Making Panini at Home –UHC TV The question is “I’ve had Panini and restaurant and sandwich shops. Can I make them at home? Absolutely you can. I make them all the time. They’re amazing. In fact, they really great for teenaged kids, let me tell you. So I’m going to do a sample for you. You can put anything you want to on this. And I’m going to show you how to do this in a couple of different way. So I’ve got pieces of bread – in this case I’ve got sourdough bread – and I’m going to use as my “glue” a little bit of cheese. You can use whatever kind you want in whatever quantity makes you happy. So, I’m going to put a little cheese down, I’m going to grab some turkey – I’ve got some smoked turkey here today that I’m just going to lay on. I’ve got some really yummy slow-roasted tomatoes that I’m going to put on, but of course you could just put fresh tomatoes on. They’d be absolutely delicious. I’ve got a little bit of greens here. This is arugula, but you could use spinach, you could skip it altogether. I think it makes it really tasty to put a little bit in there. And then, I’m going to top it off with another couple of slices of cheese. And that kind of glues the whole thing together. So now I’ve got my sandwich. This is a really good one. This will serve several people because it’s really huge. So, put the top on. This is a Panini maker. It’s electric and I use it all the time. But you certainly don’t have to go out and buy one. You can do this same thing in a skillet. The key to paninis – I’m just going to set this in and the top’s flexible and you squish it down and now it’s grilling and it’s going to be fantastic and it will grill from both sides. But you can also do this in a skillet by setting your sandwich in a skillet, putting another skillet or pot on top of it to weigh it down, and if it’s not heavy enough you can even take a big can of tomatoes, say a really heavy 20-ounce can and put that on top. That weights it down. The key to a good Panini is that is gets kind of squished and crispy on both sides. So do that, and then flip it. Another way is to take a brick, wrap it in heavy-duty foil so it’s clean at that point, and lay that right on top of the sandwich. Unbelievable. So I’ve got one that I just did. And this is the same one I did. Look at this. Isn’t this amazing? It’s all crispy and hot and fabulous. Can you hear that? Incredible. This is my Panini. Cheese and turkey and tomato. Have some fun, try some different ingredients, and definitely make Panini at home. Yum.
